ABOUT THE EXPERIENCE
Washoku (Japanese food), known around the world for its use of only the freshest ingredients and subtle preparation methods, provides a meal that is sophisticated yet balanced in nutritional value and simultaneously reflective of the Japanese culinary value of utilizing seasonal ingredients.
Even though Japan is the most highly featured country in the Michelin Guide for gourmet restaurants, it is still rare to find restaurants that can truly capture the delicate essence of washoku.
Typically in Kaiseki, eight dishes will be served one by one, tailored to reflect the season and the occasion to form a full-course Japanese meal.

We invite you to witness the great care required in determining proper ingredients, preparation method, flavoring of dishes, and choice of dining ware that the chef places upon his culinary process. We hope you will be able to discover unparalleled devotion that the chef displays for his profession.
Our host will be Tsujitome, a traditional Japanese restaurant founded in 1902 that stands out even among the Michelin 2 Star establishments.
Through this experience, you will have the opportunity to learn about Kaiseki from the head chef. Observe and practice the proper etiquette for enjoying Kaiseki while learning more about the food and the vessels in which it is prepared. After that, you will have a chance to enjoy a full Kaiseki meal at your own pace.
The master chef studied culinary philosophy with renowned Japanese artist Kitaoji Rosanjin, and is now responsible for passing on this important legacy. It is virtually impossible to put a price on the value of this understanding of food preparation, reception, and the essence of Japanese culinary hospitality.
